Is there a way to send a text message or email message or sound an alarm tone on smartphone/tablet (iPhone/iPad) when a sensor is triggered?

I know IFTTT has allowed linking sensor state changes to email and text.
Wyze is working on an update to allow our phones to have different alert sounds for different notifications, so eventually we could make it sound an alarm tone, but this hasn’t be integrated yet.

Yes, Use your Amazon Alexa account. I think you can use Alexa even if you don’t have a single Alexa smart speaker, (but who left on earth doesn’t).
Under creating the Routine, you want to use the Messaging choice. In there, you can use Announcements to Echo devices, or Notifications to send to your smart phone.
