I need to mount a new battery cam to the grout between the bricks. I have a masonry bit but I’m wondering if I should use the plastic anchors and screws or go buy masonry anchors.

Considering that the camera is not that heavy, I think plastic anchor should be fine. Take this advice with a grain of salt though. Scratch that, I just realized that you have battery cam, that might be heavy.
For mortar (I doubt there is grout between the bricks) an expanding anchor is the way to go and the plastic kind should be fine for something this small.
Use the masonry bit but start without hammer mode (if you have a hammer drill). If the mortar is really hard and you aren’t getting anywhere, turn on the hammer mode and go slow. You don’t want to hack it up too much or the anchor will fit loosely or you could chip out some of the mortar.
If the mortar is really soft/old you might have to go pretty deep to get to a good spot, so may want to drill a small test hole first to see how long of an anchor you need then expand the hole with a larger bit as needed.
