The resolution for my OG is set to HD, and the specs says that’s the full 1920 x 1080. However when I save an event image to iPhone Photos or AirDrop it to my Mac, the image is a measly 640 x 360. Why, and how can I get full size images exported?

I can’t say for sure, but it seems like iOS is down sampling the files.
I am on Android. I just ran a Live Stream Record, Photo Capture, and Event Video Download from my OG in HD.
All of them were saved 1920 x 1080:
