Ever since the update, the v2 cameras show offline in the list but when I select one of the offline cameras, I can see video right away.

Just out of curiosity, does the issue clear up for a few hours after power cycling the v2 cameras at the plug? Also are you using a WiFi mesh?
Anyhow, what fixed most of my v2 cams was manually flashing the firmware back to 4.9.8.1002 
The issue remains after removing power for 30 seconds.
All my Wyze cams are on a mesh.
This is trivial, and not worth bothering support.
