You can search google for “plastic yellowing removal” and there are products and home remedies out there. Success rate can vary though, and depending on what kind of plastic it is, can sometimes do more harm than good. Start with the least aggressive methods and work up.

Have you considered making your own with additive manufacturing? A quick search turns up several models, including a slip-on cover and one called “Doorbell Armor”. Many libraries offer access to 3D printers, and a local makerspace may also be an option.
I just have regular doorbells, they are metal but the buttons are white plastic. My front door gets direct sun all day, and the plastic buttons eventually disintegrate. On my latest ones, I removed the plastic buttons, gave them a few coats of car clear coat with UV protectant in it, let them bake in the sun for a few hours and put them back together. 3 years later, they’re as good as new.
So if OP is able to remove the yellowing (or ends up replacing the unit) that may be an option for any plastic parts too. Won’t work on rubber or rubber coated stuff though, not sure what texture that doorbell is.
I like this idea. I also don’t know about the texture of the original Video Doorbell (Wired), but I did a cover and mount for my Video Doorbell v2 that’s working out well (it’s not in direct sunlight, though). If @plstlouis can do a 3D-printed solution, then there are all kinds of filament color and material options, and a cover is easily replaceable if the owner desires a change. In the “Doorbell Armor” example I cited above, the creator describes using primer and spray paint to get the desired finished appearance, so that’s also an option if the homeowner is trying to match decor and/or create contrast to draw attention to a doorbell.
