I have my camera mounted up high and would like to know if there’s a way to set the default tilt position more down than the factory setting of straight out.

You can do one of two things: Set Pan Scan with a single waypoint where you want it. It will stay there. Set a Detection Zone pointing where you want it. It should return to that position.
