The user interface for Wyze cameras is far from usable for a technophobe, such as my wife. Is there any other user interface available for the cameras that is a little more user-friendly; Idiot-proof once the cameras are set up?

Welcome to the forum, and unfortunately the Wyze app is the only interface you get.

What issues or concerns are you having?
For example, if it is only used for Cameras. You can add the camera as a favorite then they appear in the main screen. If you don’t want them to auto stream, then that can be turned off.
Benefit then is that you go into the app, you will see all cameras on the main page, then your wife can simply select the one she would like to see.
However, if you can explain what the issue is, there may be a work around to make it easy for you

The problem is not with setting the cameras; The problem comes from trying to set up a user-friendly security system. If you can’t see the obvious difficulty with that part of the app, then it’s pointless for me to try to educate you. I’m sorry I was misled, not by Wyze, that this was to be an actual simple to use security system.
Wyze is not a security system by any stretch of the imagination.
